Growing in Quebec gardens since the 17th century. Let us remember in the 1800s, Île d’Orléans and Côte-du-Sud represented places of Asparagus cultivation, important enough to be sold on the Quebec and Montreal markets. In these years, local producers tried by all means to arrive “first” on the market to obtain a better price given the initial scarcity of supply, but also to mark their spot against the American asparagus. 200 years later, this crazy race continues. However, in Quebec, to the American asparagus was added throughout the year: the Peruvians, the Spanish, the Mexicans, the Argentines, the Dutch, the Cameroonians and the French. This means that times change; but the rules of the game themselves? Maybe not…
