1865 – Dunham
Although cow’s milk has been transformed into cheese since the 17th century in Quebec, we note that this practice was reserved for the domestic family economy. It was not until 1865, one year after the opening of “The Pionneer” cheese factory in Ontario, that the first cheese factory in Quebec opened in Dunham. It was run by loyalist E. Hill and the house specialty, as you can imagine, was cheddar.
