The “chaud” boy was the assistant to the Cook. His duties were to help prepare meals, wash the dishes and set the table. But he often ensured the night watch of the fire in the center of the galley. This allowed the workers around him to stay warm while ensuring the perfect cooking of one of the most legendary recipes in North American food history. This recipe, which, buried under the hardwood blaze, was made overnight: baked beans.
